EASY BBQ CHICKEN SANDWICHES

What’s Cooking?
The other night we were craving some good bbq! And craving some warmer weather too…  so I decided I’d make some bbq chicken sandwiches in the crock pot, a meal that is super easy to put together and pretty inexpensive too!


It was just the two of us eating and there was plenty! But adjust for how many is in your family by simply adding another chicken breast or two.


I started off with the crockpot liner, as always! I don’t know if it’s just me but I despise cleaning crockpots. They’re so big and bulky and you have to let them soak for hours. Yuck. These liners are perfect! After you’re finished cooking you simply gather the bag, throw it out and give the crockpot a good rinse. Now that’s what I’m talking about!


Next, I added two fairly good sized, skinless, boneless, chicken breasts.  Sprinkled on some salt and pepper and then I added a mixture of my favorite bbq sauces. In this case, I used our friend’s, Felix’ sauce… Beard-BQ Sauce – Spicy Blend … IT IS AMAZING!… and just a little bit of Sweet Baby Ray’s. I set it on low for about 5 hours and it was perfect!

“Low and slow!” my dad always says! He’s definitely the BBQ King around here! And I’d like to think I picked up on some of his cooking tips and tricks! But this combination of sauces worked perfectly. A lot of those crockpot bbq chicken recipes will call for a ton of brown sugar. But I didn’t want it so sweet tonight, I was more in the mood for spicy bbq!


So after 5 hours of cooking, I removed the breast’s and added them to a bowl to shred.  I could have left them in the crockpot and shredded them there in all their juices and sauce but I didn’t want it super saucy this time, so in the bowl they went!  They shredded very easily, thanks to the amount of cooking they had, and the chicken was so moist and flavorful. 


To the shredded chicken, I added back in some of the sauce/juice it cooked all day in. You can choose to do this or just add fresh bbq sauce from the jar, in my case I decided to do both.

To this, I used my not-so-secret “secret ingredient”… My sisters honey from her farm!  This is the best honey I’ve tasted! And it was perfect for my bbq. I used about 1 tablespoon and melted it for about 10 seconds then stirred it into the chicken mixture. Who needs brown sugar when you have this great honey around?… We’ve been very sparingly using this jar! We’ll see how long I can make it last until the next one!


Once your sauce is all combined it’s time to taste test. Add some seasonings like salt, pepper and garlic powder to taste or if you picked the perfect sauces then skip this step, like me!

We served the sandwiches up just like this on my favorite buns, Kings Hawaiian Sweet Rolls, along with some baked beans and Mac ‘n’ cheese on the side, but if we had some coleslaw, it’d definitely be on top of this!


We both agreed that we’d rate this 4 stars out of 5… Me, because I like my dads so much better because he smokes his meats in the Traeger Grill. And I think he gave it a 4 because he thinks his heart really belongs at the BB’s Lawnside BBQ in Kansas City… That’s definitely some of the best bbq we’ve had. He never stops talking about the food there and I never stop talking about the music! If you’re ever in Kansas City, look them up, you will be glad you did.

Easy BBQ Chicken Sandwiches
Ingredients:
1 crockpot liner
2 chicken breasts
Your favorite bbq sauces
Seasonings to taste
1 Tbsp. Honey
Rolls

Directions:
Put two chicken breasts into a crockpot liner and set the temperature to low. Add your favorite bbq sauce/sauces and sprinkle on some salt, pepper, garlic powder, etc. After 4-5 hours of cooking, remove chicken and put into a bowl, shred. Add back in some of the sauce from cooking or use fresh sauce from the jar. Heat up 1 tablespoon of honey and incorporate into chicken mixture. Season more if needed. Spoon on top of your favorite buns, serve.
Topping with coleslaw is amazing… You’re welcome!

  1. I’m not a huge bbq fan but there is a place in Memphis, across the street from the Peabody hotel. You go about half way down the alley and down a flight of stairs. If I remember it’s called The Rendezvous. It was delicious!!

    1. Nice!! We were just talking about going back there! Maybe when/if we do visit again we will look that place up! 😊
