instant pot unpacking

I recently spent about a week with my sister and her family (four kids + hubby + one on the way) and we had lots of cooking to do for the week I was there, which I enjoyed! We kept trying to getting new recipes so we could switch it up and not get bored with the food. One night, around 5:00, she grabbed her Instant Pot and a 5 pound roast. I must have gave her a look because I was wondering what she was going to do with all that meat in that short of time. She just smiled and started preparing the meat and veggies. She literally cooked 5 pounds of meat, tons of potatoes, carrots and celery in 1 hour! I was hooked. I needed an Instant Pot in my life!!….

The next night I told her I wanted to try my hand at it but I was hesitant (because I was scared of the steam… and the pressure!) I wanted her to walk me through it and show me how to use it. I have heard the horror stories on pressure cookers, but she used it so… fearlessly. She’s probably rolling her eyes right now. But sis, you were so brave flipping that pressure/steam switch! I’m sure ya’ll have felt this at some point! You overcame the fear of the Instant Pot! Guys… she didn’t even use an oven mitt or anything! Ok, let’s proceed.

I found a recipe for chicken noodle soup. You basically throw everything in the pot and cook it all a few minutes… yes, just a few minutes, and then release the pressure, add dry noodles, keet the lid off and use the saute button for about 5 minutes to cook the noodles.  Voila! Chicken. Noodle. Soup.

So! I had to get one! After I got home we went shopping and came across one on clearance! Woop! I got the DUO MINI one. It’s just my hubby and me, not a family of 6+ so I didn’t think I needed the big one. And there are TONS of recipes on Pinterest, so when I find one I just cut it half or by thirds. Works just the same. And there are so many buttons and settings on the Instant Pot, the book walks you right through it so it is easy. Yogurt! Soup. Meat. Rice. A steam setting. Saute setting. I think you can even cook a cake in this bad boy! Umm… that’s definitely on my list!

Alright, here’s the unpacking! (This is not an ad… it should be! But I don’t know how to set that up yet, haha)

Seriously… cook in minutes! In one pot! That’s good news for a gal who does not like to clean… hallelujah!

Tell me what your favorite recipe is in the Instant Pot!! I need to keep trying new things!

  1. I cannot wait to see how you like it! We have had one and I rarely used it. Thinking it is because I am your mom’s generation and I have time to cook it on the stove. With two of us here, I never thought about the mini size one. We had the huge one…

    1. I LOVE the mini one! It comes to pressure really quickly, but you do need to add a couple of minutes to everything 😉 it works great though! I used it a few times now and am impressed! hard boiled eggs were so easy and peeled great

  2. I am excited to get one. I also had always been afraid of a pressure cooker. It is my husband and I when we travel so the mini would be perfect for the trailer. My daughter and boys live with us at home so need a larger one for there. I will also be heading to Pinterest to check out recipes
